Simple roasted peppers (bell, sweet or hot) are a great addition to any meal. While we typically roast our peppers on a gas stove we are covering all three easy ways to roast your favorite peppers; stovetop, broiler, or grill.

Move over jarred peppers, we have a fresh and flavorful, and most of all EASY fire-roasted pepper recipe just for you.

Roasted red peppers are a pantry staple at our house. Packed in oil, they give a flame-roasted flavor to our dishes. However, there are days when you want more than the basic jarred peppers.

Maybe a different color pepper, a sweeter version, or maybe even a super spicy flame roasted poblano or jalapeno. Roasting at home is easier than you think.

How to Make Roasted Peppers from Scratch

There are three simple to prepare roasted peppers at home.

  • On a Gas Stove- We use this method most frequently. Easy to use indoors, you can keep an eye on it while prepping other food and you get a good flame-kissed texture. Definitely my favorite!
  • In the Oven with a Broiler- If we have to pre-heat the oven we often just turn the broiler on and roast any peppers that we need to use up. The only issue is that I am out of sight out of mind kind of girl. So sometimes I forget about the peppers. The good thing is the peppers are supposed to get burnt. I mean charred. They are supposed to get charred.
  • On a Grill- The best is charcoal, but gas works too. Probably the most traditional method for roasting peppers. We use this method during the summer, sunny days only. This means we have to plan ahead if we have any recipes to make and want the charcoal flavor.

There are some pepper roasting options that we haven't found to be very successful.

First, is on a grill pan on a stovetop. I find this method to be difficult as there is not enough direct heat on the pepper to get the required char needed for peeling the peppers.

Second, it is not recommended to simply bake the peppers A flame is needed to char the peppers properly so they can be peeled easily.

How to Roast Peppers on a Gas Stove

Simple tutorial for roasting bell peppers or hot peppers on a gas stove. By far the quickest method!

  • Place the pepper directly on the gas stove burner.
    • Turn the burner on high. If you have a vent hood it is recommended you turn that on as well. Using long metal tongs, place the pepper onto the burner, directly in the gas range flame.
  • Carefully turn the peppers for even blistering.
    • When the pepper begins to blister, use the tongs to rotate ¼ turn. Continue rotating until the entire pepper is blistered and charred. It should be almost completely black on the outside but still slightly firm. Typically 1-2 minutes per side.

  • Cool the peppers.
    • Place the roasted pepper directly into the brown paper bag and fold over to hold the steam inside. Alternatively, you can use a bowl with plastic wrap to cover the top.

How to Roast Peppers in the Oven

  • Preheat broiler.
    • Place the top oven rack six to eight inches from the broiler. Place the peppers on an ovenproof pan. Place under the broiler.
  • Carefully turn the peppers for even blistering.
    • When the peppers begin to blister, use a pair of tongs to rotate ¼ turn. Continue rotating until the entire pepper is blistered and charred. It should be almost completely black on the outside but still slightly firm. About 5 minutes per side for bell peppers, less for smaller peppers.
  • Cool the peppers.
    • Place the roasted pepper directly into the brown paper bag and fold over to hold the steam inside. Alternatively, you can use a bowl with plastic wrap to cover the top.

How to Roast Peppers on a Grill

  • Prepare your grill.
    • Regardless of whether you use a gas or charcoal grill. You will want to grill nice and hot. So that you can barely hold your hand above the grill for more than a second. Place the peppers directly on the grates above the flame.
  • Carefully turn the peppers for even blistering.
    • When the peppers begin to blister, use a pair of tongs to rotate ¼ turn. Continue rotating until the entire pepper is blistered and charred. It should be almost completely black on the outside but still slightly firm. About 5 minutes per side for bell peppers, less for smaller peppers.
  • Cool the peppers.
    • Place the roasted pepper directly into the brown paper bag and fold over to hold the steam inside. Alternatively, you can use a bowl with plastic wrap to cover the top.

How to Peel Roasted Peppers

Do not skimp on the steaming process. While fifteen minutes is the minimum the peppers will be fine sitting for longer as long as they are covered.

After a minimum 15 minutes, rinse the pepper under a stream of cold water while rubbing the skin. Continue until the skin has come off. You may have to use a spoon or butter knife to scrap off any stuck-on areas.

How to Use Roasted Peppers

Roasted peppers are one of my favorite ingredients. They are a staple. Here are some of the ways we use roasted peppers:

  • Pureed into marinara sauce
  • Romesco sauce
  • Rainbow potato salad
  • Chicken and rice bowl with fresh tomatoes, olives and parsley
  • Roasted veggie Sandwich
  • Rolled with our garlic cashew cream cheese stuffed inside
  • Folded into scrambled eggs
  • On a salad
  • Stirred into a chunky tomato soup
  • Use a spicy pepper in your next salsa or guacamole

Regardless of the roasting method, roasted peppers can be store for 3-4 days in the fridge or frozen for up to three months.
